there should be a couple nuts holding the master to the firewall and a few nuts or bolts holding the slave to the tranny. there is also a rod connecting the clutch pedal to the master, so that needs to be disconnected from the pedal. it'll either unscrew or have a pin in it or something like that.
undo all that stuff and you're all good.

You bleed them like you do brakes, really. I would just bleed it from the slave cylinder... have someone push on the clutch a few times, and hold the pedal down. While they're holding it down, crank the bleeder on the slave cylinder, then retighten it. Have them pump a few more times, and hold. Just repeat until no air comes out
